Instructions

  1. Soak dried red beans overnight, then rinse and drain.
  2. In a large pot, sauté diced onion, green bell pepper, and celery until softened.
  3. Add minced garlic and sliced smoked sausage, cooking until sausage is browned.
  4. Stir in Creole seasoning, cayenne pepper, bay leaves, and soaked red beans.
  5. Pour in chicken broth, ensuring beans are fully submerged.
  6. Bring to a boil, then reduce heat and simmer for 2-3 hours until beans are tender.
  7. Optional: Mash some beans against the pot's side for a creamier texture.
  8. Serve over cooked white rice.
  9. Garnish with chopped green onions and fresh parsley before serving.
